This chickpea falafel burger is a perfect example of how healthy food doesn't have to be boring. - ⅓ cup large flake oats
- ½ can (540 ml) chickpeas, drained well (about 1 cup)
- 3 garlic cloves, minced
- 2 green onions, chopped
- 1 egg
- 2 tsp chili powder
- 1 tsp oregano
- ¼ tsp salt
- ½ can (540 ml) lentils, drained (about 1 cup, packed)
- ½ cup diced English cucumber
- ½ cup finely chopped fresh parsley
Directions
- Whirl oats in a food processor until ground.
- Add chickpeas, garlic, green onions, egg, chili powder, oregano, and salt. Whirl until combined, scraping the sides of the bowl.
- Stir in lentils, cucumber, and parsley by hand.
- Shape into four 3½-inch wide patties.
- Heat a large non-stick frying pan over medium. Add a light coating of cooking oil.
- Cook patties until golden and warmed through, about 4–5 minutes per side.
- Serve with tahini sauce or roasted plum tomatoes.
